Atlantis Casino Resort Spa and Bistro Napa host an evening of festive dining to celebrate the wines of Silver Oak Cellars and its sister property Twomey Cellars on Thursday, January 26, 2012 at 6p.m.
This year marks the 40th anniversary of Silver Oak Cellars. Founded in 1972 by Raymond Twomey Duncan and the late Justin Meyer, Silver Oak Cellars helped to establish California’s reputation for outstanding Cabernet Sauvignon. These two viticulture visionaries set out to create a wine that was both cellar worthy and pleasantly drinkable. Upon release and after four decades Silver Oak continues to offer robust yet friendly Cabernets that are fan favorites.
With a desire to explore the possibilities of varietals beyond Cabernet Sauvignon, Ray Duncan and his four sons went on to create Twomey Cellars in 1999. While remaining true to the winemaking philosophy that made Silver Oak Cellars one of the best known brands in California, Twomey Cellars focuses on Sauvignon Blanc, Merlot and Pinot Noir grown in some of the state’s finest viticulture sites. Its lighter flavor profiles will be the perfect accompaniment to the first three courses of the menu leading up to the crescendo of a side-by-side pairing of Silver Oak’s flagship Cabernet Sauvignons from the Napa and Alexander Valleys.
The dinner pairings will consist of five courses to complement each wine’s individual character. Atlantis’ chefs drew from a wide palette of ingredients from Dungeness Crab with Watermelon Radish and Gooseberries for the Sauvignon Blanc. Albino Salmon with Foie Gras and Cherry-Orange Relish is paired with the Pinot Noir. Wood-fired Quail with Chorizo and Roasted Corn Polenta followed by Braised Lamb Shank with Swiss Chard and Tomato Jus will offer the bold partnership that the more robust reds require. Any sips of red that remain will pair nicely with the final course of Chocolate Petit Fours. The end will be a decadent Scharffenberger Hot Chocolate to round out dessert.
